Okihiro uses the pineapple as the lens through which we can view and organize many topics, from American imperial expansion to modern material culture. The book is not a history of the fruit or food alone. It is also a history of culture, thought and industry, from the colonial period to the present, and the story of how the sweet pleasant taste of a pineapple is a perfect foil for the dark history of colonialism and expansion that made it ubiquitous.
