I borrowed the ebook to check out the recipes. I made the Quinoa and White Beans with Lemon and Olives, and it was delicious. As always, I couldn’t resist and tweaked it a little. I added sun-dried tomatoes to the quinoa while it was cooking, and sprinkled some (ahem) red pepper flakes on as well.  Delicious. 

I’d been toying with making a healthier version of Mediterranean Rice and Beans with Olives, and had decided to use Quinoa, which is why I chose this recipe as the first one to make. The fresh lemon juice added a lot! It says the recipe makes 4 servings, but it’s very filling and I got 6 servings out of it. I ate it cold for lunch one day, but prefer it heated. Would make a nice filling for stuffed peppers.

Wanted to try several more recipes, so borrowed the physical book at the library. I much, much, much prefer the physical book. I like the pictures, having one recipe per page, etc.

Has a nice variety of recipes and uses recognizable ingredients.

May update review after making more of the recipes.
