Recipes weren't very easy, especially with random ingredients that you can't really use otherwise than for a certain recipe.

I was very excited when I heard that the latest in the "500" series of cookbooks would be about vegan food. These books have proved to be very popular in the kitchen with their compact size and distinctive colourful covers.

For anyone who has ever thought that vegan food must be a limited affair, this book will put those fears to rest with, you guessed it, 500 dishes to try out. You can literally cook a different meal for every day of the year and then some!

The book's introduction contains a comprehensive section on how to make virtually any dairy substitute that may be required - from oat milk, to mock Parmesan and sour cream. Whilst it may be quicker to buy a substitute from the supermarket, there is something lovely about creating a dish entirely from scratch.

Despite this section, the recipes have little reliance on any "fake" products with the author opting instead for fresh whole ingredients. There are ideas for breakfasts & brunches, soups, bean and lentil meals, grain and pasta dishes and desserts among others. Most recipes feature several suggestions for variations. For example, the humble potato salad has a basic hot version, a light one, one with various colours of potatoes as well as a German variation.

Aesthetically, the pages are literally bursting with colour with many photographs illustrating the recipes throughout.

This is one of the best all-round vegan cookbooks I've seen in a while and one all cooks will love having at their fingertips in the kitchen.
