We started watching Josh's YouTube channel sometime late last year, and his "But Better" videos have us constantly asking ourselves what else we could make at home, because he makes the techniques of making way better versions of things in your own kitchen look very accessible. We were thrilled when he announced his cookbook, and I'm surprised we waited four weeks to buy it. I got it earlier this week, have now read it cover to cover, put post-it flags on the things I want to make right away (expect to do this yourself, because you'll likely have most of the ingredients he uses!), and I made his buttermilk biscuit recipe this morning. Let's just say that my great grandma would be mad that Weissman's recipe took half the time to make biscuits twice the size of hers, but she'd still eat them anyway because they're so damn tasty and perfect. They might have even earned me a *papa kiss* for not opening the oven as they cooked (BTW, if you don't watch his YT content, what are you even doing?).

Thanks, Josh, for making me believe that I really can make my own butter for those biscuits, my own sourdough starter, and my own hot dog rolls, among many other things from this book.
