I was so excited to find a GF cookbook for traditional Jewish baked goods but, listen, I'm just never ever going to make your  cookbook's highly specific blend of gf flours. I'm just not. And I desperately wish cookbook authors would understand this. Stop insisting that your blend really is the absolute best thing there is because there are so many off the shelf gf flour blends now, please just develop your recipes using one of those, seriously.
