If you want to learn how to make bread at home from scratch, this is an absolutely brilliant place to start. The introductory essay(s) talk about both the art and the science of breadmaking, making it much easier to grasp as a whole. I've had nothing but successes with this book, and breadmaking is quickly becoming a regular part of my life since, once you get the hang of it, it's actually pretty easy.

I love this cookbook and have had much success with several of the recipes! If you’re interested in a very step-by-step guide for bread, this is the cookbook. If you follow the directions to a T as clearly written, the results are just as described. I also like that Rose Levy Beranbaum included tips for success and the science of baking.

An authoritative cookbook, time tested and well explained. The long intro is well worth the read and the directions are excellent. Covers most breads, rolls and bagels. Nice coobook.

Berenbaum has a really generous definition of 'bread,' going beyond the typical rolls and sandwich breads to include a variety of desserts, muffins and assorted quickbreads in this book.

Well, I've flipped through all the pages and made 2 recipes, so I guess that counts as read. This is an extremely technical, extremely detailed look at bread baking. The recipes, so far, are good (the pizza crust was fantastic) but I find the it a little confusing sometimes - lots of slipping back and forth between pages, which isn't the nicest feature in the book. The tone is kind of hilariously high-falutin', but it's extensively researched and almost overwhelming informative. I'm going to try to bake every recipe in the book and I have no doubt that I'll learn quite a bit along the way.

A fantastic resource for learning all about bread. Don't be intimidated by the fact that each recipe fills multiple pages. Beranbaum's painstaking attention to detail allows even novice bread bakers to follow any of the recipes in this book with ease - and have delicious results. A good one to keep on the shelf and experiment with as time permits.
